I came up with this DIY Candy Corn Cookie recipe by myself! I wanted something that tastes like candy corn, but also doesn’t taste like candy corn. It’s hard to explain. Candy corn is supposed to taste like a mixture of vanilla, buttery caramel, and marshmallows. I don’t think regular candy corn actually tastes like that, BUT my Candy Corn Flavored Cookie recipe does! I tested out the recipe and it was perfect, I didn’t have to change anything. I KNOW you will love these, everyone in my family gave it two big thumbs up!
You will need:
- a mixing bowl
- a cookie sheet
- parchment paper
- rolling pin
- candy corn cookie cutter
- 4 oz of unsalted butter – melted
- 3/4 cups of sugar
- 1/8 tsp of salt
- 1 egg
- 1 tsp of vanilla extract
- 1/4 tsp of marshmallow flavor concentrate
- 1 tsp of baking powder
- 1 1/2 cups of all purpose flour
- yellow and red (or orange) gel food coloring –
- white, orange, and yellow sugar sprinkles
Preheat the over to 350 degrees F. Pour the sugar, baking powder, and salt into your mixing bowl and give it a quick stir with the whisk.
Now pour the egg, melted butter, vanilla extract, and marshmallow flavoring into your bowl and whisk the ingredients together.
Once the mixture is combined, add the flour and mix it together with the spatula. When it starts getting hard to mix, take out the spatula and mix the rest by hand.
Spread out some parchment paper and put your dough on it. Knead it again to make sure everything is mixed well. Divide the dough into 3 portions.
Take the first ball of dough and add a few drops of yellow food coloring and knead it together. It should be a nice bright yellow dough. If it’s still pale, add some more food coloring. Then take the second ball and add a few drops of yellow and a little bit less of red food coloring, you can also use orange food coloring if you have it available. Mix it well. Leave the last one uncolored, this will be the white part of your candy corn cookies.
Roll each color into a snake, making the orange snake the thickest snake, and the yellow and white a thinner snake. Lay the snakes touching side by side to resemble the candy corn colors. It should be yellow then orange, then, white.
Use your rolling pin and roll it long ways so it stretches the dough longer. Roll the dough to about 1/4″ thick.
Now take your candy corn cookie cutter and cut out some cookies! Make sure the tip of the corn is white, and the bottom of the corn is yellow. Pull off the extra dough from around the cookies and separate them back into it’s own colors. It’s okay if a little bit of the dough is mixed. Knead the dough again and follow steps 6 and 7 until you use up all the dough.
Lay the cookies on your cookie sheet. Use the colored sugar sprinkles to cover the top of the cookie, matching the color of the sugar and cookie dough.
Bake the cookie until the edges are very, very lightly golden. This should take about 4-5 minutes. Let it sit on the baking sheet for a few minutes, then transfer it to a cooling rack until the cookie is cool.
